Story

Fazenda Um was established in 2009 when Stefano Um, the son of South Korean immigrants to Brazil, purchased what was then an abandoned farm in South of Minas Gerais. With no prior background in coffee farming, Stefano began producing coffee with a deep passion for quality and traceability, connecting initially with Asian specialty buyers and quickly developing a reputation for meticulous lot management and consistent processing discipline. The farm's name, translating simply as Farm One, reflects Stefano's philosophy of singular focus on quality above all else.

Under Stefano's guidance, Fazenda Um developed a specialty program around the Catucai 785 variety – a Catuai x Icatu hybrid well adapted to the South of Minas region – processing it through carefully managed pulped natural (honey) methods that retain mucilage on the parchment during drying to develop sweetness and body. Fazenda Um gained global recognition in June 2023 when Stefano's son Boram Um became the 23rd World Barista Champion and the first ever winner from Brazil – and the first champion to win using a coffee produced on their own family farm. This achievement brought unprecedented international attention to the farm and validated the extraordinary quality potential of Brazilian specialty coffee at the highest competitive level.

Carmo de Minas and the broader Mantiqueira de Minas sub-region of Minas Gerais hold a Protected Geographical Indication (GI) awarded in 2011, recognising the area's distinctive terroir and the quality of its coffee production. The region is nestled within the Mantiqueira mountain range a landscape famous across Brazil for its naturally occurring mineral springs and remarkable biodiversity – at elevations between 900 and 1,500 metres above sea level. Coffee cultivation in Carmo de Minas dates to the 19th century, but the area's identity as a premium specialty origin was consolidated in the late 1990s and early 2000s as producers began focusing systematically on quality over volume.

Brazilian specialty coffee has undergone a significant transformation in international perception over the past decade, driven by the efforts of producers in Mantiqueira de Minas and other premium sub-regions who have demonstrated that Brazil can produce coffees of extraordinary complexity, florality, and cup distinction. The collaborative work of producers like those in the Carmo Coffees network and experimental programs such as the AMA Project have been central to this repositioning, attracting global specialty buyers and competition roasters to the region.

Brew Parameters Dose 20g in a V60 and add 300g of water in 5 pours of 60g at 90 degrees C. Start with a 60g bloom for 35 seconds then allow water to drain through each subsequent time before adding more water, aim to finish at 2:45.
