This CM Washed lot, made up of mixed SL varieties, has a ripe citrus acidity with notes of fresh apricot. As it cools, subtle lemongrass becomes more evident on the finish.

Story

The Thageini wet mill is one of four mills operated by the Aguthi Farmer's Co-operative Society in Nyeri County, and the second largest by member producers, with around 350 men and 100 women members (the wider Society has around 2,000 members). The Society runs training for members on farm management, picking, sorting and agronomic technique, and holds workshops for producers to learn from one another. Our green bean partner, Project Origin, began a relationship with Thageini began in 2017. After an exceptional 2018 harvest of washed lots, Project Origin invested in the station's infrastructure and, in 2019, worked with the team to install carbonic maceration equipment – built using techniques and recipes refined in Ethiopia, Panama, Nicaragua, Honduras and El Salvador – as well as funding new drying beds. This CM Amber selection is the product of that ongoing collaboration.

Brew Parameters Dose 20g in a V60 and add 300g of water in 5 pours of 60g at 90 degrees C. Start with a 60g bloom for 35 seconds then allow water to drain through each subsequent time before adding more water, aim to finish at 2:45.
