Gutity, Kochere, Yirgacheffe , Ethiopia Gutity is a high-altitude coffee-growing community within Kochere Woreda in the wider Yirgacheffe region. Farms sit between 1,950 and 2,300 metres above sea level, with the harvest generally running from December to February. High in Gutity, within Kochere Woreda, warm days, cool nights and reliably dry harvest weather create ideal conditions for natural processing. Coffee grows here between 1,950 and 2,300 metres above sea level, where the area's diverse heirloom varieties contribute to balanced and layered cup profiles. This Grade 1 Red lot brings together coffee grown by smallholder producers in garden plots across Yirgacheffe. After delivery to the washing station, the cherries are combined and carefully hand-sorted, removing under- and over-ripe fruit and selecting cherries measuring between 18 and 22º Brix. The whole cherries are dried in full sun on raised beds for 18-30 days, with regular turning to encourage even drying and preserve clarity. Once the coffee reaches 10-12% moisture, it rests inside the dried cherry pod until milling and export. Further colour sorting and hand sorting help refine the final lot.
