The Paragon filter brewer is one of Nucleus Coffee Tool's latest inventions. It emerges from a collaboration between Nucleus and Professor Chahan from the Zurich University of Applied Science.

You can retain more flavours in your cup by cooling down the first moments of your Paragon filter coffee with a studied and purposely crafted chilling rock.

The tool includes an adjustable frame that fits your favourite device and two chilling rocks.

Enhance flavour at every stage

The Paragon filter system is built around one core idea: capturing and preserving the most aromatic compounds during brewing. By rapidly cooling the initial extraction phase, it prevents delicate flavours from dissipating, resulting in a cup that is more expressive and layered.

Unlike traditional brewing methods, where heat can cause volatile compounds to evaporate, the Paragon filter coffee brewer locks in those aromas at the point they matter most. This creates a noticeable difference in both flavour intensity and clarity, making it a powerful addition to any pour-over setup.

How the Paragon filter works

The system uses a specially designed chilling rock positioned beneath your brewer. As the first drops of coffee pass over the rock, they are cooled instantly, stabilising the extraction and preserving key flavour compounds. This process allows you to:

  • Capture more aromatics in the cup
  • Enhance clarity and definition
  • Maintain balance across the entire brew

Whether you're brewing light, fruit-forward coffees or deeper, more chocolate-driven profiles, Paragon filter coffee highlights the full spectrum of flavours with greater precision.

Flexible and compatible brewing

The adjustable frame makes the Paragon filter system easy to integrate into your existing setup. It is designed to work with a wide range of pour-over devices, allowing you to experiment without needing to replace your favourite brewer. From V60 to other manual brewers, the system adapts to your workflow while enhancing results.

The science behind Paragon filter brewing

Paragon was created in collaboration with Zurich University of Applied Science (ZHAW) after researching the effect of temperature on volatile aroma compounds preservation and the resulting sensory flavour outcomes in coffee.

ZHAW measured up to 40% more key aroma volatile compounds in the final brew with a Paragon filter system than the same brew with no chilling.

Box includes: Paragon frame, two chilling rocks and a manual.

Built for consistency and repeatability

Consistency is key in coffee brewing, and the Paragon system helps deliver repeatable results with minimal effort. By controlling the temperature at a critical stage of extraction, it reduces variability and allows you to dial in recipes with greater confidence.

For those looking to explore advanced brewing techniques, the Paragon filter provides a reliable way to experiment while maintaining control over the final cup.

Complete your Paragon setup

To get the most out of your brew, consider expanding your setup with additional tools. Explore the full Paragon range or stock up on accessories like the Chilling Rock Pack for extended use. You can also find replacement rocks to keep your system performing at its best.

With the right setup, the Paragon filter system becomes an essential part of a refined and flavour-focused brewing routine.

What makes the Paragon filter ideal for brewing coffee?

The Paragon filter preserves volatile aroma compounds during extraction, resulting in a more flavourful and aromatic cup. Its chilling system enhances clarity and highlights the unique characteristics of each coffee.

How does the Paragon filter improve the taste and clarity of my coffee?

By cooling the first stage of extraction, the system helps retain delicate flavours that are often lost in traditional brewing. This leads to a cleaner, more defined cup with improved balance and complexity.

Is the Paragon filter compatible with all coffee brewing methods?

The Paragon filter is primarily designed for manual pour-over brewing but is compatible with a wide range of devices thanks to its adjustable frame. It integrates easily into most setups without requiring major changes.

How do I properly clean and maintain the Paragon filter for long-term use?

Rinse the frame and chilling rocks after each use with warm water and allow them to dry completely. Avoid harsh chemicals or abrasive materials to maintain the integrity of the components and ensure consistent performance over time.
