| Age Best Used | 8-13 days after roast |
| Brew Parameters | Dose 20g of ground coffee and add 300g of water starting with a 60g bloom for 35 seconds at 90 degrees C followed by 4 additional pours of 60g aiming to finish the brew between 2:25 and 3:00 |
| Additional Brew Parameters | Fill the kettle 1/2 full and and allow the temperature to gradually decline off the heat throughout the brew. If extract chilling allow the first 2 pours to run over the paragon rocks. |
