Iris Estate Aril Geisha, Panama: A unique Carbonic Maceration (CM) hybrid process Geisha with pineapple, peach, and orange blossom notes, delivering a refined, tea-like structure.

Irish Coffee Comp Blend: A bespoke 50/50 blend of Koke, Ethiopia,  CM Natural and a Colombian co-fermented honey-processed Caturra from Finca Campo Hermoso. This blend offers notes of cherry, smooth chocolate and coconut designed to elevate Danny’s signature Irish Coffee cocktail.

Story

In June 2025, Australian coffee champion Danny Wilson earned second place on the global stage at the World Coffee in Good Spirits Championship in Geneva. His routine demonstrated technical precision, creativity, and a deep respect for coffee’s sensory potential.

The Aril lot from Iris Estate, Panama was cultivated at high elevations in the Volcán region and processed through an innovative CM hybrid process that amplifies floral and stone fruit notes while preserving clarity.

Danny’s Irish Coffee Comp Blend combines two experimental coffees:

CM Natural Heirloom from Koke, Ethiopia, featuring layered tropical and fruity notes. Complimented by a Co-fermented Honey-processed Caturra from Edwin Noreña’s Finca Campo Hermoso, Colombia carefully fermented to develop strong notes akin to coconut, vibrant fruit characteristics, and aromatic clarity.

Together, these coffees form a complex, dessert-like profile designed to perfectly complement whiskey and cream, bringing the spirit of the championship into your cup.
