Story
In 2019, inspired by Dark Matter Coffee's unique approach in Chicago, Lost Origin’s team sought to create their own coffee processing facility in Panama. After successful collaborations with local teams at Santos Cafe and Elida, they received industry validation and secured a government grant to build a state-of-the-art processing facility.
Lost Origin's coffee processing involves custom fermentation vessels and three-stage drying rooms with precise controls. Their lab explores the impact of microorganisms on coffee flavours, enabling them to process natural and washed coffees using yeast and bacteria combinations for unique cup characteristics.
Situated in Panama City above a craft brewery, Lost Origin's outsider perspective fosters experimentation and innovation, challenging traditional coffee processing norms. With access to the world's best coffee, they have built a unique platform for exploration and contribution.

Boquete, Panama
Finca Don Benjie, a 33-hectare coffee plantation, graces the Chiriquí Highlands in Bajo Mono Canyon, near Boquete, Panama. Nestled at the slopes of Barú Volcano, the farm benefits from volcanic soil, pristine Caldera River waters, and the Bajareque mist, creating ideal microclimates for specialty coffee.
The de Dianous family has been in the coffee business since 1914 after acquiring the farm from an American pioneer. In the 1980s, Dr Renan Esquivel, a nature enthusiast, became the farm's owner and began adding exotic trees, plants, and other coffee varietals. The farm's altitude ranges from 1400 to 1550 meters, ideal for the growth of high-quality coffees. Under new ownership, Finca Don Benjie's legacy of preservation and innovation continues to thrive.
