How to get the best tasting cup

NOTE THESE ARE A STARTING POINT AND INDICATE A RANGE TO WORK WITHIN

Age Best Used 10-14 days after roast
Brew Parameters Dose 20g of ground coffee and add 300g water starting with a bloom of 60g for 35 seconds at 91 degrees C followed by 4 additional pours of 60g allowing the liquid to drain through each time aiming to finish the brew between 2:45 and 3:10
Additional Brew Parameters Start with 91 degrees brew temperature for the first 3 pours then add the final two pours below 85 degrees C. This can either be done with 2 kettles set at different temperatures or by adding a half cup of cool water to the kettle after the third pour. If extract chilling allow the first 2 pours to run over the paragon rocks.
