Age Best Used 7-13 days after roast
Brew Parameters Dose 20g of coffee and add 310g of water starting with a 60g bloom for 35 seconds at 91 degrees C, then 70g, allow to drain completely through before 3 additional pours of 60g. Aim to finish the brew between 2:30 and 3:00
Additional Brew Parameters Start the kettle at 91 degrees and allow the temperature to gradually decline off the heat throughout the brew. If extract chilling run the first 2 pours over the paragon rock. Grind this coffee slightly finer than the other two options in the Advanced processing box.
Best Freeze Date 9-11 days after roast
