‘Producer Fernando Zemanate grows the ‘Colombia’ varietal near the village of Popayancito, in the department of Cauca in Colombia’s far south west. Cherries are harvested throughout June and July, being picked and pulped on the same day before being dried for 10 to 12 days. His efforts to educate and train pickers in selecting only red and ripe cherries have seen a dramatic increase in quality from La Toma farm in recent years.
Sweet, yellow stonefruit notes are the main features of this washed Colombia varietal, which has a vibrant, floral aroma and finishes with a tea-like quality.
This coffee is part of Project Origin's 'CM Selection' series of carbonic maceration-processed coffees.
