‘The ‘Supersonic’ lot was first developed from a collaboration between producer Mauricio Salaverria and ONA Coffee founder, Sasa Sestic. The unique natural processing of this coffee uses careful drying techniques in order to provide clarity in the cup profile while maintaining the power and body of the natural process.
This mixed lot of pacas and bourbon varietals is characterised by an orange- like acidity, plum qualities and a hint of chocolate.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
