Francy Elena Rivera Quiñonez has been growing and producing coffee for more than 20 years, growing up in coffee plantations and beginning her own farm with a first planting of 1000 Matura plants. She has operated Finca ‘Santa Elena’ with her husband since 2011, cultivating varieties that are resistant to harmful diseases such as ‘la roya’, also known as leaf rust. This washed processed castillo is selectively picked when the cherries are purple, dry fermented, washed three times and dried using parabolic methods for up to 20 days.
This espresso is characterised by sweet qualities of toffee and marmalade, which transition into an orange flavour as it cools.
