This Roasters Selection blend celebrates one of our favourite coffee varietals: Pacamara! This varietal was created by the El Salvadorian coffee institute in 1958 by crossing the natural bourbon mutation, Pacas with Maragogype varietal (often dubbed as the “elephant bean”). The idea of the new ‘Pacamara’ varietal was to achieve the best of both varieties: Pacas is known for its resistance to diseases and ability to adapt to different growing conditions, and Maragogype is known for it large seeds and generally high quality cup profile. Selected by our Director of Coffee, Sam Corra, this blend is comprised of Pacamara lots from El Salvadorian producers Raul Rivera (Santa Rosa), Gilberto Baraona (Los Pirineos) and Mauricio Salaverria (Finca Himalaya).
This blend of Pacamara lots shows the best of this diverse varietal. A red apple quality dominates the palate and transforms into a dried currant quality as it cools. Throughout the espresso, take note of botanical and floral notes and how they develop.
