This exclusive lot was produced through collaboration between legendary producer, Jamison Savage and Project Origin. Part of the Diamond category of the ‘CM Selections’ series, this carbonic maceration lot involves whole cherries being placed into tanks which are sealed and flushed with CO2. This creates a controlled fermentation environment, which helps to develop complex flavour qualities.
This carbonic maceration processed geisha is sweet and clean, with notes of mandarin and ripe stonefruit accompanying a floram aroma and finish of jasmine.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
