‘Don Fabio is one of the most well-known and most respected coffee producers in Honduras. After selective picking of only the red cherries, the mucilage is removed and fermentation undertaken. Drying occurs on mechanical dryers called “guardiolas”, which dry the coffee at a lower temperature for a 60-70 hours.
This is an interesting and flavoursome filter coffee from producer Don Fabio. Orange and raisin notes are present in the front and middle palate, with a delicious milk chocolate finish.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
