‘La Fantasia’ is a project farm operated through collaboration between our green bean partner, Project Origin and Banexport, Colombia’s largest green coffee exporter. Over the last two years, these teams have worked together to create a range of experimental lots, designed to heighten the quality of regional, mixed varietal lots from across Colombia. This castillo lot has been produced using carbonic maceration techniques, which extends the fermentation time in a controlled environment to heighten flavour qualities, sweetness and acidity.
This carbonic maceration processed Castillo is characterised by citrus acidity and wine-like, fruit notes with a botanical aroma and finish.
