‘This regional coffee comes from Finca La Laja, located in the El Tambo municipality of Colombia. Producer Armando Fernandez Montenegro has grown coffee for more than 40 years, beginning his career as a picker before saving enough money to purchase his own farm. He picks his cherries according to readings from brix readers, which measure the level of sugars inside a ripened coffee cherries.
Notes of red berries are accompanied by a citrus-like acidity and a chocolate quality in this natural processed espresso coffee.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
