This coffee is part of Project Origin’s ‘CM Selections’ series of carbonic maceration experiments. The Jasper category includes coffees with a flavour profile with rich fruit qualities. This lot was used by John Gordon to win 6th place in the 2018 World Barista Championships in Amsterdam.
As a milk-based coffee, it displays purple fruit qualities accompanied by notes of rum raisin and milk chocolate.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
