This coffee is part of Project Origin’s ‘CM Selections’ series of carbonic maceration experiments. The Indigo category includes coffees that have a profile of intense flavour, powerful fruit qualities and unique elements as a result of extensive fermentation.
As a filter coffee, it displays a flavour profile of blueberry, plum and notes of vanilla.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
