This natural processed pacamara placed 3rd in the 2019 ‘Best of Honduras: Late Harvest’ auction, hosted by Project Origin and IHCAFE. This auction program is held each year to celebrate ‘late harvest’ coffees, which typically grown out of normal harvesting season. The microclimates and changing landscapes in Honduras slows down the maturation and development of coffees such as this, creating complex flavour profiles and some of the most unique expressions of coffee we’ve seen from Central America.
This award-winning Pacamara lot is one of our favourite lots from Honduras this year. Fruit notes of wild strawberry and watermelon dominate the brew, and pair well with a musk-like quality and an oolong tea finish.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
