Mauricio Salaverria grows this mixed bourbon/pacas lot at Villa Galicia in the mountains of Ataco, El Salvador. The clay in the soil of this farm, combined with an abundance of natural shade, creates a very cool environment for the coffee trees to grow. The excellent ventilation at the farm allows for even and thorough drying of his honey process lot, which has a rich and developed sweetness.

Chocolate and cranberry sweetness are the most distinguishable flavours in this honey processed espresso, which finishes with a citrus acidity.
