Part of the Jasper category of the ‘CM Selections’ series, this carbonic maceration lot involves whole cherries being placed into tanks which are sealed and flushed with CO2. This creates a controlled fermentation environment, which helps to develop complex flavour qualities.
Natural floral qualities in the geisha variety are accompanied by high quality citrus, notes of chocolate and a cherry like fruit quality in this carbonic maceration processed filter coffee.

Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
