The ‘Diamond 0419’ lot is a replica of the ‘Diamond 1318’, which was used by Agnieszka Rojewska to win the 2018 World Barista Championship. This heirloom varietal has been processed using ‘carbonic maceration’ techniques, in which the coffee is fermented in a sealed environment free from oxygen and flushed with CO2. This, along with controlled temperature and humidity, controls the yeast activity and development of fermentation.
Prepared as a filter coffee, this carbonic maceration processed heirloom varietal has notes of orange, orange blossom and peach.

Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
