‘Don Fabio is one of the most renowned and innovative coffee producers in Honduras. The ‘Las Corinas’ lot is the result of selective picking of red, ripe catuai coffee cherries which are dried using mechanical drying machines called ‘Guardiolas’. Don Fabio uses this mechanical process to mimic temperature and humidity cycles of day and night, without risk of destabilising the drying process due to drastic weather changes.

This natural catuai from Honduras is rich and sweet, with flavour qualities such as raisin, dark cherry and a hint of dark chocolate.
