Don Fabio Caballero employs mechanical drying in ‘guardiolas’ to dry his coffee, replicating the cycles of day and night for 60-70 hours in these controlled conditions. This technique is used as it is consistent, and there is no risk of mould developing or other issues related to natural drying outdoors. In addition to improving shelf life of the coffee, it also makes his lots consistent from year to year. This lot, ‘Las Corinas’, is grown between his farms in Marcala, Honduras.

Qualities of raisin, chocolate and dark cherry are the highlights of this delicious espresso roast from Marcala, Honduras.
