This incredible washed bourbon placed first in the Project Origin ‘Best of Honduras: Late Harvest’ auction in 2019. Grown in the hills of Santa Barbara, producer Kelvin Pineda developed this lot after changing his focus to specialty coffee in 2017 after purchasing a block of land from his father. The coffee cherries were placed into cement tanks to enhance fermentation, before washing, extended solar drying and regular movement to ensure consistent drying.
This award-winning, washed bourbon is characterised by notes of red apple and papaya, with a mandarin acidity throughout the palate.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
