‘This is the third year we have produced Carbonic Maceration coffee with producer Jamison Savage. After careful growing and picking, the coffee spends a long period in a sealed tank at a constant temperature to control the fermentation. This ‘carbonic maceration’ processing enhances the structure and texture, without altering the natural characteristics and terroir from Panama.
The ‘Apex’ is a complex and interesting experimental coffee. A bergamot-like quality is accompanied by notes of dark stone fruit and a chocolate truffle finish.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
