This coffee is part of Project Origin’s ‘CM Selections’ series of carbonic maceration experiments, falling into the ‘Indigo’ category. This includes coffees that have a profile of intense flavour, powerful fruit qualities and unique elements as a result of extensive fermentation. This is the second year we have received ‘Indigo’ coffees from Kochere, Ethiopia – and we can’t wait to try more!

Extensive fermentation has resulted in unique flavour characteristics in this heirloom varietal. As a filter coffee, it displays a flavour profile of guava, raspberry jam and rosewater.
