This carbonic maceration processed coffee from Guji, Ethiopia has been intentionally crafted to highlight orange, red and floral notes. Created in collaboration between the Muje Masina washing station and Project Origin, the ‘CM’ processing of this heirloom varietal creates complexity of flavour and traditional washing methods used after fermentation add clarity and a clean profile.
Prepared as a filter coffee, this carbonic maceration-processed heirloom varietal has notes of toffee, citrus and raspberry.
Coffee beans are judged on a 100-point scoring system that assesses body, balance, uniformity, sweetness, clarity and acidity. Coffee scoring 80+ points is considered specialty coffee.
