The ‘CM Selections’ are a limited series of experimental, carbonic macerated coffees created by collaboration by green bean company Project Origin and various coffee producers around the globe.

“The [CM] Selections came about as a result of collaboration with dedicated producers, who are excited to lift their coffee to new potentials,” said Project Origin founder, Saša Šestić.

“After the work on the carbonic maceration method with the Sudan Rume I used at the World Barista Championships in 2015, we have kept looking for new ways to improve cup quality.

We are exceptionally proud of these coffees and are excited to finally share them with the public.”

The coffees will be shared in a public cupping session on the evening of October 2 at ONA Coffee’s Sydney shopfront, ONA Coffee Marrickville.

Manager of ONA Coffee Marrickville, Isaac Kim says that the event presents a great opportunity for the public to engage with the speciality coffee industry outside of a consumer-driven setting.

“We’re really excited to be able to invite people in to enjoy these world-class coffees,” he said.

“It’s not every day that you get to taste coffees that have been in the World Barista Championship finals, let alone the coffee that was used to win it.”

In addition to the cupping session, ONA Marrickville will be selling gift boxes of three CM Selections coffees:, roasted for espresso, milk-based and filter. This box will include the Ethiopia Diamond 1318, which was used by Polish Barista Champion Agniezska Rojewska to win the 2018 World Barista Championship.
