The competition, which took place yesterday in Sydney saw coffee professionals from across Australia compete in the country’s largest coffee cocktail competition.

Danny said has been preparing for the competition for about three weeks, between roasting coffee for ONA Coffee.

The first of his beverages, an Irish Coffee was comprised of espressos, bourbon, sugar syrup, water and Tilba cream.

The other, a ‘Leona Soda’ was made up of espressos, lime, pineapple syrup, sherry, ron zakapa rum and soda water.

His championship-winning drinks were inspired a natural processed coffee from Honduras, La Leona.

“Originally I was using a coffee from the Guji reason of Sidamo,” explained Danny.

However I was inspired by the exciting flavour profile of the La Leona natural and how I [could] showcase it in different ways using my cocktails.”

Soon after winning the trophy, Danny was already talking about the next step: the World Championships in Brazil.

“I’m really excited to be able to visit Brazil to share my drinks,” he said.

“Brazil is such an important, coffee-producing country and I can’t wait to see it in person.”

The World Coffee in Good Spirits Championships takes place November 7-9 in Belo Horizonte, Brazil.
