Jorge Rivera is one of the top producers of Pacamara in El Salvador, placing 1st in the 2104 and 2017 El Salvador Cup of Excellence. This lot is dried under the natural shade of the forest on Santa Rosa farm, providing relief from the hot and dry conditions in Chanatelango. A slow dry on raised beds ensures that maximum sweetness is absorbed from the coffee cherry fruit into the parchment and coffee bean. This also ensures this Pacamara, a varietal known for heavier flavour, does not end up tasting too heavy as an espresso.
